Matthew, I'm intending to pull information into this lead post from whatever replies follow, and that it becomes a sticky.
This thread will document the fluid and change requirements for a P2 S60, and other P2 models, as information comes in. I've dug this up by searching other threads, and the web, and I'll be following it myself. Members who've got 1st-hand experience, please chime in, and I'll edit accordingly.
General guidance:
These numbers should be roughly correct for any 2001-2009 S60, may vary slightly for other P2 models. Always check your own vehicle's manual for capacities, types, and factory-recommended service intervals.
Use good brand name fluids, find one you like and stick with it. Don’t mix brands, especially Shell and Mobil products.
Engine oil:
5W-30, 5.5L/5.8qt, synthetic recommended
other models may have different capacities
OE is Pentosin (per FCP)
FCP SKU: KIT-538537
Kit includes oil, new filter, o-ring, drain plug, and crush washer.
New filter and o-ring needed with each change, OE is Mahle, Volvo part 1275810
New crush washer needed with each change, Volvo part 977751
Change interval: 7500 miles or 12 months, whichever comes sooner.
Some people will insist on changing oil every 3000 miles or 3 months. Personally, I'd do so if it looks dirty or feels gritty.
Automatic transmission fluid:
JWS3309
Total capacity (AW55-50): 7.2L/7.6qt
Total capacity (TF-80SC): 7.0L/7.4qt (R model)
Sump capacity: 3.2-3.8 quarts
OE is Aisin (per FCP)
New crush washer needed with each change, Volvo part 977751
Also popular: Toyota T-IV, Mobil 3309.
Technically, any 3309 fluid should do, but this becomes one of those religious topics.
Filter is internal to transmission and cannot be changed without disassembly.
Possible to accomplish partial or complete change by disconnecting cooler line at radiator.
Avoid the Valvoline MaxLife LV, as it seems to expand/contract too much with temperature changes.
Avoid external power flush machines like the plague.
Change interval: 52,500 miles only if towing, or if a message displays (or so the factory says.) This is hotly contested.
Manual transmission oil:
MTF97309
Capacity: 2.0L/2.1qt
Angle gear (AWD only):
SAE 75W/90 gear oil
Capacity ?.?L
Extract with fluid syringe and refill until it spills.
FCP SKU: KIT-LM2048KT
Includes new drain plug and crush washer.
Change interval: 100k miles
Haldex unit (AWD only):
Specialized AOC oil
Volvo part number 31367941
Extract with fluid syringe and refill until it spills.
New filter needed with each change, Volvo part 30787687
Change interval: 40k miles or 4 years, whichever comes first
Rear differential (AWD only):
SAE 75W/90 gear oil
Capacity 0.7L
Extract with fluid syringe and refill until it spills.
FCP SKU: KIT-LM2048KT
Includes new drain plug and crush washer.
Change interval: 100k miles
Brake fluid:
DOT 4+
Boiling point 280C
Capacity approx. 1L
OE is Pentosin (per FCP)
NOTE DISCREPANCY: The fluid FCP sells as OE is rated for 265C, not 280C per the owner's manual.
Change interval: 3 years or 37500 miles, or annually in humid climates
Steering fluid:
CHF202/CHF11s (can be mixed)
Capacity 0.9L/0.9qt
OE is Pentosin
Change interval: unknown.
Coolant:
Silicated, phosphate-free HOAT recommended, or IAT if you must
Capacity 8.8L / 9.3qt
These engines shipped with blue Pentofrost silicated, phosphate-free HOAT. More recently Volvo has released a green silicated HOAT, which is compatible and can be mixed, and has replaced the blue Genuine Volvo coolant for all models, past and present.
If you can't find a silicated HOAT and/or won't shell out for it, then you can get away with a traditional IAT coolant, such as plain old Prestone green, but it's only good for 30k miles as opposed to the 150k on the sHOAT coolant label. If there's nothing otherwise wrong with your cooling system, then, the more expensive sHOAT is clearly more economical in the long run.
Do NOT mix types - and just because it's the same color, doesn't mean it's the same type. When in doubt, flush and replace. For this reason, I'm not thrilled with Volvo's decision on this: in a used car, you won't know if it's Genuine or Prestone.
If you see orange in the reservoir, it might be Dexcool, so get it the h*** out of there, post haste. It can gel up if air gets into the system.
Change interval: 100k miles or 6 years on Genuine or OE sHOAT coolant, 35k miles or 2 years on Prestone (et al) IAT.
A/C Refrigerant:
R134A unless you're in an R1234yf market
Capacity: 1kg/2.2lb
Change interval: none, refill by pressure measurement
Blinker fluid:

On the subject of fluids: has anyone else's local Toyota dealer rasied their TIV prices for the ATF? Mine almost doubled in price and I want to know if I'm getting shafted.

You're doing business at a dealership, so, that's a yes. You're getting shafted.
That being said, I have no idea if they're charging an unusually unfair price for the ATF.

Just Google Toyota Transfluid and compare prices at other dealers including Amazon and others. For fluids I've decided to purchase from FCP exclusively and use the warranty. Sending it back should be cheaper than buying new once you've forked out for it initially. Don't have to store it and bring it for recycling.

FCP is great.. for americans. Lol.. paying double in duties and shipping and it makes it no longer worth it to order from there. Only parts I buy online now are from Rockauto who has amazing duties/shipping included rates which still make them highly competitive to local options here. I'll call around. Thanks for the info. Are you able to obtain Havoline? Have it in the 03 S80 T6, 03 GS300 (1Yr) and 03 Odyssey for over 2 year. All full flushes using 12 quarts to flush. I've used the same method with other brands of transfluid on many many cars without issue.

Pentosin CHF 202 and 11s are compatible, can be mixed. Also, for the few parts that I needed right away my Volvo dealer would match or come real close to the discounted prices on the Volvo parts web store. You just have to ask and act like you don’t need it that day. Lol
