You have a problem with the O-rings in between the engine block, and the oilpan. I had the same problem in my V70 2000.
Just search for o-ring replacement.

Maybe the pan was already dropped and sealed with some strong sealant. Need to cut it with a cutter blade if it fits.
Once the pan is off, take a moment and inspect or take a picture of all rods. If one looks darker than the others, make sure there is no play in the bearing. I'd check the PCV passage inside the oil pan while there.

I thought about that but theres a ton of soot and shit that looks like its been caked on for years so I feel like it was never touched. In other news, my s80 took a shit while driving home from work today, so that just became the new priority. Engine starts up but loses electrical power, thinking alternator or bad grounds. I was really looking forward to my afternoon nap.

That reminds me I need to do another oil change on mine. Put HQ full syn in it right away after purchase. Oil on the dipstick has gotten pretty dark fairly quick. In my experience when switching to full syn it doesn't clean up good until about the 3rd change (to where fresh oil will stay pretty clear out past 2000 miles. I prefer not to use additives or "10 minute" cleaners. Loosens up too much junk all at once and you can get problems (clogged sump screen, passages etc). Let the detergents in the oil do the work-- gradually.
Good news update!
So we did an oil flush with some oil cleaner stuff from Oreillys, cant think of the name off hand, but guy at the store recommended it. And out came pretty much clean oil. Then we dropped the pan and there were no signs of sludge at all!!! At most there was oil burnt to the pan and a little bit of small dirt clumps. To me it looks like normal stuff you would see from a 11 year old car with 160,000+ miles. Oil filter was clean too.
Question: Is there suppose to be a oilpan gasket? because there was no gasket.
Next we checked the bearings and there was no sign of play except moving side to side, where as in a video I looked at the play was up and down. I take it the side to side play is fine but not 100% sure.
The engine made no bad noises when we ran the cleaner through for 5 minutes and oil light did not come on.
When reading the manual I saw a note in it where the low oil pressure light comes on after driving it hard... So I'm hoping it must of been a fluke from giving er the beans during the test drive and the ride home no oil pressure message was do to adding too much oil.

If the pan is clean that's great news . I got the same good. News when I dropped my 1.8 turbo Beetle pan looking for sludge
You can't do a "feel" inspection of bearings, you actually take them apart and squish plastic in them to measure clearances. Don't do this. If you aren't hearing horrible knocking noises, leave them alone for now.
Do replace those orings, think about a new oil pump if you've got bread ($100 bucks I think?) since you are in there.
Trying to think of anything else to do with pan off.
It could just be someone put in the wrong viscosity oil but that's hard nowadays

I think the whole white block family uses liquid gaskets on the oil pans but VIDA or a good manual will confirm for your S60

The actual oil pressure needs to be measured. Oil pressure switches on Volvos can make the oil light and messages come up when thee is no problem. In some cases the switch leaks oil when this happens but not always.
One I repaired had the oil pressure relief valve (the nub sticking out on oil pump that makes timing belt have to be threaded like dental floss) stuck and measured oil pressure was very high, like 130 psi cold!!!! I was surprised it hadn't blown the plastic oil filter container wide open. The high oil pressure had damaged the oil pressure switch and when the oil pressure fell below 30 psi the light and message would come on.
