The strut comes off the car, the spring gets compressed, old parts removed, new parts on.

Plan a half day for both sides,

Yes, that’s the correct way to do this. You need to remove the strut assembly from the car to disassemble it.

That’s fine. It’s “ generally accepted practice “ to renew struts in pairs, so once done, drive it around a few corners to get a feel for any asymmetry in handling. Tough times require these choices.

It’s not dangerous if you drive it like an adult. If you do go the shop route, you might get some upsell about how only doing one will make your car explode.

Since the strut is pretty much bottomed out at this point I'm sure the handling will improve once it's replaced, and it'll be safer than it is now.

gnalan, I agree with what everyone else has said. I checked and I do have a decent boot also.

I haven't had a chance to pull the wheel off and check everything that's been suggested yet. Should I just go ahead and pull the strut assembly out and give it a good look over, or is it something that can still be done with it on the car?

Just curious, volvolugnut, where are you located?

If you take it off you will, of course, not be able to drive until you put it back on. Personally, I would wait until I had parts before removing the strut assembly.

I am in Oklahoma. Too far for a road trip. Is Circleville the place that has a big pumpkin festival?

Yes, Pumpkin Show. Unfortunately, they canceled it this year because of COVID-19.
