I have a few hundred miles on the 99 S70 GLT auction car

After doing a complete valve job and replacing the ETM several times the car runs great.
Now, the oil pressure idiot light flickers at random. Since it is completely random I’m thinking clogged oil pump pickup. My questions -
Is the oil pressure sensor a likely fail item?
Where’s a good point to connect a gauge?
Is dropping the oil pan and replacing the oil pickup a huge job?
Where can I get a new pickup tube/screen?
Thanks for any suggestions!

At idle , you can ignore it per the usual manual.
If it flickers above idle, put an oil pressure gauge at the oil sender and confirm good pressure before running it loaded again. Don’t ruin your engine !!

You might want to probe around inside the oil pan to determine if there's a build-up of gunk that interfering with oil pickup. If so, that will need to be resolved to avoid serious ware. With the pan plug out, you bend a stiff wire of something and scrape around the bottom of the sump. If there's a build up you sludge I think the pan will need to come down to clean it up. If there's no serious buildup that might be clogging your oil pickup screen, then a few o-rings in the oil pickup system might have become deformed. FCPeuro did have the replacement kit. If you like the car and want to keep it for a long while, it would be worth laying it up for a few days to do the repair.
Dropping the oil pan on your GLT (turbo?) is a bit more complicated than a non-turbo. I found that I needed to drop the cradle a few inches (front cradle bolts, mounts and loosen rear mount bolts) to gain enough clearance to clear the steel power steering lines and bring the pan out through the frame rail.
I think there's a youtube video that shows using a winch to pull the lines back far enough to drop the pan straight down. I wouldn't (and didn't) stress the lines like that, but if you don't want to loosen the subframe, it's really your only other option.
After you unbolt the pan, you need to remove the oil pickup tube (2 10mm bolts) to drop the pan. I have a complete tutorial on the process. I think it's on the MVS site, but if you can't find it, I can send you a link.
With adequate care these cars can run for a long while.

Ever replaced the pan o-rings?
If not, I'd drop the pan to replace them regardless of the light flickering or not. It's a bit fiddly due to the power steering lines, but not an extremely complicated job either.

I’m not an expert on your car but in P2s common for oil pickup orings to harden and suck air—resulting in low oil pressure. Could be oil pressure sensor too.

Could be the oil pan O-Ring per others have suggested. When I purchased the 00 S70 SE Base from auction it had a ticking noise from the pan and the oil light would flicker from time to time. Research indicated dried up or improperly installed oil pan O-Ring. I used some STP first then the AT-205 in order to rejuvenate (swell up) the O-Ring as I didn't want to drop the pan. The ticking and intermittent oil light flickering are both gone.
Using 15W-40 Rotella T6 for the summer and Rotella T6 5W-40 for the winter. I feel the Kirkland 15W40 did a better job with the ticking noise but they're not in the warehouse now and only through the Business Center which we don't have in the area so no deliveries. The Rotella T6 5W40 is better suited for the rest of the fleet.
