I have a 1998 Volvo V70. The check engine light came on the other day. Took it to the shop and they read the code and told me it was the coolant temp sensor and replaced it. The next day the check engine light came on again. I took it back and they read the code and said that the temp sensor was tripping it again. They decided to replace the thermostat to see if that was causing the problem. The light came on again today. Before I go back again I was hoping that someone may know what the problem may be so I can get it fixed right this time.

Engine Coolant temp indeed. And that is the code you continue to get? I'm out of ideas, or the temp sensor they put in is bad.

I took the car to Autozone today and they gave me a PO118 code.

So I took the car back to the mechanic today and he said that he will replace the ECT again, but is not convinced that it is a bad sensor that he put it. If this doesn't work his feelings are that the problem is electrical and has to be traced down somewhere between the sensor and the instrument cluster. Said that he has seen this kind of thing happen before. The issue is now causing other problems such as; fuel injection is making the engine rev up to 2000 rpms on initial start-up, temperature gauge goes up into the red zone after the car runs for 5 minutes and then settles down (Coolant level is fine).
When this all started all I had was a check engine light on. Any words of wisdom would be appreciated.

When I had the P0116, I ended up changing the sensor and thermostat. It has been a couple of weeks and so far so good. In researching the code, it looks like the sensor also goes to the ECM to adjust the fuel mixture, etc. The ECM is supposed to substitute a value when getting the fault, which typically results in a rich mixture. If the signal is erratic, then the idle and timing gets shifted around.

When installing the ECT sensor, I had to take the clip apart to slip a box end wrench around the sensor. The leads are identical and I ended up marking them. I'm not sure whether reversing the leads would cause the problem you describe. Sounds like in your case it might. It could just be a loose or faulty connection. The P0116 is a general fault, but the P0118 is an ECT reading high fault.

Had the same porblem, on v70 98. I also replaced the ECT sensor with no result. The same person that responded the mail to you, did to me too.
He mention that he replaced the ECT sensor and the thermostat.
I replaced the thermostat 4 days ago and so far so good, (thank you). I would try the thermostat again and not the ECT sensor. Good luck, Andrew.

You guys rock! I appreciate all the help. I took the car back and they replaced the ECT again and so far all of the problems seem to be rectified. So it appears that it was, in fact, a faulty sensor that they put in. Let's keep our fingers crossed. Thanks again.
