Take a look at these guides:
http://volvospeed.com/850rbrake1.php
http://volvospeed.com/850fbrake1.php
They're about the same as any other car, but make sure you grease the backs of the pads or they will squeal like crazy!
I like the Volvo genuine pads, but I'm sure others will chime in with what they have used.
The parking brake shoes may need to be replaced; most of them at this age have fallen off their backing. Get into the back wheels and have a look around first - you can probably find the shoes at Advance or Autozone, aftermarket won't matter so much for those. Lee has a write-up on here, search 'parking brake repair' or something of that sort on the site.

I just did the front brakes on my 98 V70. The rotors and pads were replaced in February, but they used inferior semi-metallic pads. DO NOT USE THOSE. Napa had Ceramic pads for $45, it took me literally 1/2 hour to swap the new pads in. That includes a smoke break and eating pizza in between wheels.
