I've got my 2006 s60 2.5t AWD up on ramps this afternoon for a nice full-synthetic oil and filter change.
I have angle gear fluid, a new crush washer, and a fluid extractor that will fit the angle gear opening. Do you all think it would be worthwhile from ramps to evacuate and replace with the same amount of fluid while I'm under there? I know it hasn't been changed in a while, and I just figure it would be a good time to do it. Would it be advisable to do it when the car is at an angle with ramps? I'm not looking for perfection, but just to evacuate as much fluid as I can and replace it again with the new Volvo spec fluid from FCP. My initial inclination (based on one recommendation) is to have it level, but I'm in the city and have limited space and I'm not extremely comfortable with jackstands.

With the front on ramps, If you have a floor jack (& stands) just prop up the rear end so it’s ‘about level’ and carry on.
Proper fill procedure is “fill til it dribbles out, then evacuate ~100ml”. This is why it’s recommended to have the car level. It’s not the end of the world if you can’t get it perfectly level If unsure, evacuate only 80ish ml after your “fill ‘TIL it dribbles out”.
And no, I would not replace with the exact quantity you evacuate. Who knows how long it’s been since it’s been done and who knows how much was initially put in there.

While doing the front gear I would advise to replace the rear differential gear oil also. The plug on the rear differential faces the rear of the vehicle. To reach it you'll need an extension and wobble joint. The plugs head size and crush washers are the same size for the front and rear.

i did mine on ramps aka on an angle, theres no need to go overboard, unless you take the AG apart there is always some old oil in there. However i am getting a tiny (a few drips on the engine pan after 1000km) leak from the large nut o ring so i may have overfilled it...but its a replacement AG that looked really clean so no history on any leaks..
