Do it just like the trans, remove the return hose at the reservoir, pump into a container, replace as you go, maybe a half-liter at a time. two to three cycles should have clean fluid in the whole system

Check The electrical Portion of the ignition switch. Also check the condition of your battery cables and B+ cable to the fusebox. It doesn't sound fuel related because the dash losing power. When you push hard on the pedal in first or second gear, is there wheel slip? If so, that might trip the ABS ...

Doesn't look bad for the mileage. I wouldn't worry much with the light varnish on most surfaces. If anything, I would remove the oil pickup tube and clean it as thoroughly as possible. Yes there is a pilot bearing/bushing. I couldn't find it at FCPs site, but Volvo US showed it. 20$ part. 1397077. The Skandix clutch Kit should only be disc and pressure plate by the lower part number

1998-2002 should be waterfall grille like 1998-2000 "other" P80s, Eggcrate was a 2003-4 thing And XCs. Note the comments about the badge.
