I have a 1990 760 turbo with 320,000 miles that is leaking oil and the valve cover is the recipient of much of this oil. Is it possible that the oil cap gasket is bad and allowing oil to spit up over the valve cover?

It certainly is!! These gaskets are shared by just about every Volvo model and they leak oil after just afew months. I replace mine at least every nine months.
Your 760 turbo has no oil trap that can clog so I would pay close attention to the PCV and perform an overhaul of this if you have excessive crankcase pressure.
