ECM-5000 A/C Pressure sensor Signal too low
Suppose you have to replace the sensor. Would you have to empty the refrigerant?
Or you just unscrew the sensor and put another one in place? Totally dry work?
.
is A/C Pressure sensor replacement a "DRY" work?

Recover freon, replace sensor, evacuate system and then recharge.
Example of Precision: Measure with a Micrometer, mark it with Chalk, and then cut it with an Axe.

On my 1999 there are presto (tire type) valves under each sensor allowing replacement without losing the AC charge.
I've never worked on my 2005 P2 AC but Alldata says replacement requires charge evacuation/replacement

Mine is a 2002
Vida shows me 3 sensors;
one on the receiver dryer (pressure sensor?)
one on / attached/ close to the refrigerant pipes inside the cabin (temp sensor?)
and one somewhere else (could be the same as the second one)
I try to put my hand on the first one (on the dryer) but the refrigerant hose seems to get lost underneath the cooling fan and the radiator. I can't see it. Do I have to remove the fan / coolant hoses to find out it is not there??

You can see the pressure sensor on the dryer with a tiny inspection mirror and a flashlight. To replaece it, you will still need to depressurize the system in a legal fasion.
At 15 years of service, I would replace the dryer as well - since I am at it - and then vaccum and refill afresh.
Cheers!

Thank you very much for even more discouraging words "see it with a tiny inspection mirror and a flashlight"
(with a Ralph Kramden accent)
Gee how am I going to put my hands on it and work there, I who have difficulty dialing a cell phone.
If it starts giving problem I might have to see a AC specialist $$$.

It is doable, however, according to VIDA you take the rad out of the way. I believe there was a workaround procedure of some sort if you want to try to search here on the forums.
As for the cellphone dialing-related challenge, there are all kinds of voice command apps that can do that for us
