I use recommended octane mainly at Mobil gas stations, I've noticed any of my euro cars like Mobil better for what ever reason. I did try a tank of the highest octane V-Power at Shell though and it seemed to actually run better. Going to do another trial tank on next fill up (been using Mobil for a few tanks now) and see if I get the same experience and not just a placebo run again.

Never mix Mobil and Shell. People behind you will appreciate it.

I usually get it pretty empty (about a gallon or so left) out of curiosity why are you not supposed to mix the brands?

I've shared this story in the past, but it is relevant again for this post. I used to work for Sam's Club in the Chicago market and the last store I ran had a gas station. We had our annual weights and measures inspection from the State of Illinois and we dispensed a gallon of gas in a container from each pump. I asked the inspector what they do with the gas and he replied they test it for purity and octane level to ensure accuracy to what is posted on the pump. Naturally, I had to ask which gas is the best and he replied without any hesitation Shell is by far the highest quality gas. He told me that the actual octane rating for Shell is typically 2 or 3 points higher than what is posted on the pump. He told me most fuels they test are either spot on or +-1. Not sure if this would apply to the entire country, but should hold true in Illinois.

You should never let a tank get below 1/4 if you can help it

If you were referring to me as I'm the one that said I get it down to a gallon or so, that's only if I'm switching brands which isn't often at all. Otherwise yes it's always above a quarter tank.

What are peoples thoughts on this:

Yesterday I went to a different Mobil station than usual because it was closer to me, normally all the pumps say "up to %10 ethanol" on this pump the mid-grade and low-grade said "10% ethanol" and the premium octane only had "7% ethanol". Is that "guaranteed" 3% difference worth going from mid-grade to premium?

You should be using premium regardless. As for the ethanol content, I've yet to see any substantial evidence that it's a concern. If it were more readily available I would run e85.

Greetings. I use Chevron from my neighborhood station. No Valero, 7-11, Racetrac or "mom and pop gas/ tax prep / hot sandwich " stations. But Shell seems to make performance better in my car and Dodge Ram 1500.
