Hello! The past couple of weeks, every time I go up a hill, down a hill, over a bump, I hear what sounds like something small, heavy and round (bolt?) rolling around from the back of the car. I have checked all of the side panels, under the trunk where the spare tire is held (I've taken the spare tire out) and can't find anything. Is there another space something could be loose and rolling around?

Put somebody else in the driver's seat, get in the back seat and have them take you for a ride.

Absolutely do the above...new set of ears and relocate yours into the back seat.
Also, can you be dead certain it's "rolling"? It could be a very rattly sway bar link.

Definitely sounds like something rolling around but I will do this, good idea. It totally sounds like something from underneath and in the back passenger side of the car like there would be something obvious in the spare tire area... but nothing can be found. I'm wondering if there is a space under the car a rock could have got caught in and is now rolling around.
Inside the car? The little panels that lift off on the side? I keep similar things in there as well but I've taken everything out now and checked multiple times. Still can't find anything

After sleuthing in the back seat try going all the way back onto the load floor.
Remove the spare and curl up in the well and have your helper drive again. Peel back the covers atop the rear shock mounts and try jiggling them.
Get the car on ramps (speaking safety here) and look around for scuff marks or polished spots.
I trust your descriptions but I don't trust our hearing to discern "metal-to-metal" or "rolling" with 100% accuracy.
Remove the spare and curl up in the well and have your helper drive again. Peel back the covers atop the rear shock mounts and try jiggling them.
