Hard to say until you get your trouble codes read. Have them read for free from the OBD-II port in your arm rest by a local auto parts store (Auto Zone, Pep Boys, etc.) and post the codes here...that will help us put you in the right direction for what's going on with your car.

there are no codes at all ! ...and sometimes the stutter/hesitation is for as long as 5 seconds !! the light can turn green, and the cars behind me might honk cuz my car isn't moving, even though my gas pedal is halfway to the floor! although usually the hesitation is short-1/2 a second or so.
during the "big ones" as described above, i put the pedal down, car doesn't go..rpm's go up maybe 100-200, i'll put the pedal down hard to try to make the car go, and a few seconds pass until zoom the car goes.
what's wrong with my car?

Sounds like it's missing. When were the plug wires and plugs replaced? What did you replace them with? Wrong plug gaps as well as Bosch wires cause such problems as you describe. Bougicord wires and correctly gapped (.028 inches) bosch copper plugs (even for a turbo) or Volvo plugs that are correct for your vehicle are the way to go.

I've had the same problem with mine for the last 6 months or so...All my indications are that it is a bad MAF sensor. I sometimes don't throw a code either, but whenever I do, its P0171...(lean fuel).

Are your plugs fouled black? Is there black soot in your tailpipe?

I'm just waiting for my new MAF from FCP Groton...
