I am changing the spark plugs on my 01 V70.
Anyone know what the torque specs are?

I just get them hand tight and then turn them another 1/4 turn. The correct torque is 20Nm or 14.75 ft Lbs (really, enough to compress the aluminum piece that's on them).
Make sure your plugs are gapped correctly (0.027~0.031). The book I believe recommends 0.030 but if you're having any ignition issues at all or are using copper plugs (recommended) gap down to 0.028. Even if you buy pre-gapped OEM plugs, check them. They are now being sold for a variety of Volvo's and there is no guarantee they are correct out of the bubble seal.

When I purchased the plugs at Advance Auto Parts they told me that the correct gap was .041. I pulled one plug out of the car and it was right about .041 too. Does this sound right to you? I have not had any ignition problems and was just replacing the plugs for maintenance. Should I go ahead with the .041 or does it seem a bit too wide to you?

Way too wide... but if you got autolite plugs you're not going to be happy with them anyway- go change them out for Champion copper or better yet, Bosch copper plugs (FR8DC). Make SURE to gap them down to what I said above- AutoZone is often wrong.

Bosch Platinum's have been known to cause issues (misfires) in our cars to. Our cars are very finicky about plugs. Let's hope you don't have any hiccups with those plugs. If you're going Bosch, the plain 'ole cheap copper cores are best.
