What kind of oil goes in the pancake? I'm referring to the one that is to the right of the transmission with the drive shafts coming out of it.

Pancake?? I don't think I've ever heard car parts described like that.
You mention drive shafts going into it... Are you talking about the differential?? Or the transmission itself? Both are going to use the same fluid respectivly, but we'd need a bit more information about the vehicle to help you figure out what you actually need.
How about year, model, motor code and trans code?? Something like mine.... 03 V70 B5234T3 AW55-50SN. Can generally be found on plates or stickers on your motor, trans or around the engine bay.
If you can't locate those, then a quick stop into an AutoZone or similar establishment can ID what you have, but before using what they suggest, you should confirm its compatibility with Volvo applications. Not all fluids meet Volvo specs and can damage them!!

He clued is with... Transmission and driveshafts... But that's not nearly enough to figure out what the "pancake" is.
It is really amazing how people translate their perception of motor shapes and functions. I got this all the time in tech service... They'd call well known parts by some oddball name and it took a while to figure out just what they were talking about.
In this case maybe a picture would solve the issue quickly?

I think he means the bevel gear/angle gear. 75W-90 synthetic. Volvo has a low foaming spec for this so other brands will say they do not meet the spec.
Its important to keep up on this fluid due to the bevel gears proximity to the turbo.

I was thinking more of a pic from the OP rather than guesses from the gallery.
WAGs only serve to confuse as evidenced by JRLs answer. See, my WAG would be the strut top. It's the only truly flat, pancake looking thing up there to the right of the transmission, technically the driveshafts go into it at the knuckle and if the lift strut has crapped out, it'll puke a sticky oily substance all over up there.
But again.... Totally a WAG!!
