replace front and rear engine mounts.
Does anyone know where to find a good resource on how to replace the front and rear engine mounts on a 2000 Volvo s80?

You need to be more specific. AFAIK there is no rear engine mount, there is one on the bottom passenger side, and the one at the top, both like to fail and the replacement procedure is documented very well on the forum. There is also a youtube video you will find.
is for the 850. I've heard it's quite similar to the S80 mounts. There are 5 total as far as I know: top, transmission torque mount, right wheel well, and the front/rear hydraulic mounts (http://www.ipdusa.com/products/5573/112761-engine-mount). Those seem to be the ones the original poster is talking about.

Thank you, those were the mounts I were looking for but didn't know the names for. Also, would you know what would be a good repair manual to buy? Is Chilton a good one to start with? Thanks.

Are you sure these need to be replaced as they very rarely fail? The hydraulic mounts seldom fail. There should be no need to change those (unless you see them leaking)
Example of Precision: Measure with a Micrometer, mark it with Chalk, and then cut it with an Axe.

The two pads, front and rear, require lowering subframe a little (18mm) while supporting engine from the above. Remove all three engine/transmission mounts before starting on the front engine pad, then move to rear.
Front requires removing the fan assembly, while rear will need disconnecting the steering column u-joint.
If not careful, the ps axle cv-joint would damage if engine is raised above 25mm. Jack-stand is OK, I would prefer to raise it with wheels on the ramps, eliminating any chance of PS cv-joint from failing.

Thanks. After checking the mounts I found that all of the sub-frame mounts (or bushings) and the engine mount (right under the camshaft) were all okay and did not appear to be cracked or broken. I did however buy the IPD Sub-frame Bushing (http://www.ipdusa.com) Inserts into my bushings for added measure and I did replace the transmission torque mount as well as the upper engine mount. All seems to work very well for now. 
Note: After a few months and about 3,000 miles plus later, I notice that the upper engine mount is tearing again due to the high heat and vibrations i guess. I might need to replace it again in a year or so.
