Any idea how to diagnose a blend door or air door probes without pulling the heater core? I did see the motors, cams and linkages move when I had the pass side panels off. Seemed to be smooth, but I have no idea what the full range of Travel is supposed to be.

I’m pretty sure all P2s use full flow heater cores

Agree. I am 90% sure there is not a heater core control valve. Coolant is always flowing through it.

It's full flow as mentioned. At the end of this video I had a heater core cut open to check what's inside

I was about to buy a new heater core then went out and checked the inlet and outlet tube temps at the fire wall. When set to heat there is a large temp delta between the two. Then when set to cold, both tubes are hot. Seems like I am getting decent heat exchange.... but the air is still lukewarm at the vents. I would love to verify that my blend doors are fully operational. Can anyone tell me how to verify that all of the doors are in proper position when set to max heat? I am wondering if I have some bypas and mixing with other air....

You can verify the bend motor and linkage is operating. Remove the side panel of the center console and kick panel under the drivers side. Just above the heater core you can see the linkage and motor for the bend door that directs air over the core. With the car running adjust the temp from low to high, you should see the linkage move. Then repeat on the passenger side.

If everything works when in High it's most likely the sensor in the ACC panel. When on High the sensor is bypassed and it runs a fixed program.
It's quite easily replaced with a standard off the shelf component and a bit of soldering if it is damaged in some way. It could also just be full of dust.

At 32:00 you may see a bit how/which side linkage above the pedals is moving to activate the flaps inside
